Making Salad Dressings With Avocado Powder

  • 1/4 cup orange juice
  • 2 tablespoons apple cider vinegar
  • 1/4 cup olive oil
  • 1 pinch of salt
  • a pinch of ground black pepper
  • a pinch of garlic powder

Combine the avocado powder, vinegar, and orange juice. Let this mixture sit for 15 minutes to allow the avocado powder to rehydrate. Stir in the salt and pepper, and then slowly stream in the olive oil while whisking constantly. The dressing should come together with a smooth, creamy texture. Use immediately, or store in the fridge for up to 3 days.

4-Herb Green Dressing

This dressing is so green you can serve it on St. Patrick's Day! Although it has a creamy texture, it has a very light, herbal flavor, making it a good choice for green salads. You can spread it on sandwiches, too. You'll need the following:

  • 2 tablespoons avocado powder
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh parsley
  • 1 tablespoon fresh oregano
  • 1 tablespoon fresh tarragon
  • salt and pepper, to taste

Combine the avocado powder, lemon juice, and water in the bowl of a food processor. Let sit for 15 minutes. Add the herbs, salt, and pepper, and process until smooth. Slowly drizzle in the olive oil while the food processor is still running. If the texture still seems too thick, you can drizzle in an additional tablespoon of olive oil. Use immediately, or store in the fridge for up to 24 hours.
